12 corn tortillas
¼ cup vegetable oil
1 bunch green onions (chopped)
3 cups Monterey Jack cheese (shredded)
1 cup Longhorn cheese (shredded)
Old Hammett enchilada sauce (recipe here)
2 lbs. Old Hammett Chili (prepare dry)
Fry tortillas for 10 second on each side. Put 2 tbls. chili in tortilla. Sprinkle with chopped onion and jack cheese. Roll and put in pan, seam side down. Top with enchilada sauce and grated longhorn cheese.
